Easy lunch ideas UK
The classic jacket potato lunch, done properly. Serves 1, about 10 minutes.

Method
Prick the potato all over with a fork so it cannot burst.
Microwave on full power for 8 to 10 minutes, turning it over halfway, until a knife slides in easily. For crisp skin, finish it in a hot oven for 10 minutes.
Mix the drained tuna, sweetcorn and mayonnaise in a bowl with a little black pepper.
Split the potato open - careful, the steam is hot - pile the filling in and put the salad on the side.
