Fakeaway Sweet & Sour Chicken

You'll need

  • 500g chicken breast, cut into chunks
  • 2 peppers, cut into chunks
  • 1 onion, cut into chunks
  • 1 tin pineapple chunks in juice (435g)
  • 3 tbsp tomato ketchup
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tbsp cornflour
  • 1 tbsp vegetable oil
  • 300g long-grain rice

Method

How to make it

  1. Rice

    Cook the rice in boiling water for 10 to 12 minutes, or as the packet says, then drain.

  2. Fry

    Heat the oil in a wok or large frying pan and fry the chicken for 6 to 8 minutes until golden and cooked through with no pink inside.

  3. Add

    Add the peppers and onion and stir-fry for 4 minutes so they soften but keep a bit of crunch.

  4. Sauce

    Drain the pineapple juice into a jug and whisk in the ketchup, soy sauce, vinegar and cornflour until smooth.

  5. Thicken

    Pour the sauce and the pineapple chunks into the pan and let it bubble for 2 to 3 minutes, stirring, until thick and glossy. Serve over the rice.

Food safety

If you have rice left over, cool it within an hour, keep it in the fridge and eat it within 1 day. Reheat it once only, until steaming hot. Other leftovers: fridge within 2 hours, eat within 2 days.
