Method
Heat the oil in a large frying pan over a medium heat. Cook the onion and pepper for 8 minutes until soft, adding the garlic, cumin and paprika for the last minute.
Pour in the tomatoes and simmer for 8 minutes, stirring now and then, until thick.
Make 4 dips in the sauce with a spoon and crack an egg into each one.
Cover with a lid and cook gently for 6 to 8 minutes until the whites are completely set. Season and serve from the pan with the bread.
