Method
Heat the oven to 200C (180C fan, gas 6). Toss the mushrooms in the oil in a large roasting dish, add the sausages and roast for 15 minutes.
Turn the sausages, lay the bacon rashers and the tomatoes in the gaps and roast for 10 minutes more.
Push things aside to make two gaps, crack an egg into each one and put the dish back in the oven.
Bake for 6 to 8 minutes until the egg whites are fully set. Check the sausages are cooked through: no pink in the middle and the juices run clear.
