Beef & Bean Chilli

Big batch, freezes well, feeds four. Serves 4, about 35 minutes.

You'll need

  • 500g lean beef mince (5% fat)
  • 1 tin red kidney beans, drained
  • 2 tins chopped tomatoes
  • 1 onion, diced
  • 1 pepper, diced
  • 1 tbsp olive oil
  • 2 tsp chilli powder (to taste)
  • 1 tsp ground cumin
  • 300g basmati rice (75g dry each)

Method

How to make it

  1. Soften

    Heat the oil in a big pan, add the diced onion and pepper, cook 5 minutes until soft.

  2. Brown

    Add the mince, break it up with a spoon, cook until there is no pink left - about 6 minutes.

  3. Spice

    Stir in the chilli powder and cumin and cook for 1 minute so the spices lose their raw edge.

  4. Simmer

    Tip in the tomatoes and drained beans, bring to a bubble, then simmer gently for 20 minutes, stirring now and then.

  5. Boil

    Cook the rice as the packet says while the chilli simmers.

  6. Serve

    A quarter of the pan over a portion of rice each. Cool leftover chilli within the hour; fridge 2 days or freeze. Cook fresh rice each time.

Cool leftovers, get them into the fridge within 2 hours and eat within 2 days. Reheat once only, until steaming hot all the way through. Cooked rice is the exception: cool it within an hour, keep it no more than 1 day, and reheat it once only - or cook fresh rice.
