Quick lunch ideas UK
A tin of beans and some Cheddar, crispy in 15 minutes. Serves 2, about 15 minutes.

Method
Roughly mash the beans in a bowl with a fork, then stir in the pepper and spring onions.
Spread the beans over 2 tortillas, scatter over the cheese and press the other 2 tortillas on top.
Brush a large frying pan with the oil and cook one quesadilla at a time over a medium heat for 2 to 3 minutes on each side, until crisp and the cheese has melted. Turn it with a wide spatula.
Leave for a minute (the melted cheese is very hot), then cut each into 3 wedges.
Melted cheese stays very hot: leave it a minute before biting.
