Frozen peas and ham, a bright green soup in 25 minutes. Serves 4, about 25 minutes.

Method
Heat the oil in a large pan over a medium heat and cook the onion for 5 minutes until soft.
Add the potato and the stock, bring to the boil and simmer for 10 minutes until the potato is soft.
Tip in the peas and simmer for 3 minutes. Let it cool a little, then blend until smooth. Don't overfill the blender: hot soup can spit.
Stir in most of the ham and heat until steaming. Season with pepper (ham is already salty), ladle into bowls and top with the rest of the ham.
Leftovers: cool, get them into the fridge within 2 hours, eat within 2 days and reheat once until steaming hot.
