Method
Cook the pasta in a large pan of boiling water for the time on the packet, drain carefully and rinse under cold water.
Rub the chicken with the oil and cook in a frying pan over a medium heat for 10 to 12 minutes, turning, until there is no pink inside and the juices run clear. Rest for 5 minutes, then slice.
Toss the cold pasta with the pesto and the tomatoes.
Fold through the chicken and rocket. Eat straight away, or pack into boxes, keep in the fridge and eat within 2 days.
