Method
Cook the noodles as the packet says, drain them and toss with a few drops of the sesame oil so they do not stick.
Heat the rest of the oil in a wok or big frying pan until hot. Stir-fry the chicken for 5 minutes until it is white all the way through with no pink.
Add the pepper, broccoli, carrot, garlic and ginger and stir-fry for 4 minutes - the veg should still have a bit of bite.
Add the noodles, soy sauce and spring onions, toss for a minute until everything is hot, and serve.
