Home-made chicken pie with veg and mash

A proper family pie without a heavy pastry base — shop-bought filo on top keeps it lighter than a full pastry case without losing the crunch.
Ingredients
  • 4 chicken breasts (about 600g), diced
  • 2 leeks, sliced
  • 1 onion, diced
  • 250g carrots, diced
  • 250g mushrooms, sliced
  • 600ml chicken stock
  • 150ml semi-skimmed milk
  • 3 tbsp plain flour
  • 6 sheets filo pastry
  • 1.2kg potatoes, peeled and quartered
  • 50g butter
  • 100ml milk (for the mash)
  • 2 tbsp olive oil
  • 2 tsp thyme
  • Salt and pepper
Method
  1. Heat the oil in a large pan and fry the onion, leeks and carrots for around 6 minutes, until starting to soften.
  2. Add the chicken and mushrooms, cook for around 8 minutes until the chicken is no longer pink outside.
  3. Stir in the flour, cook for 1 minute, then gradually add the stock and milk, stirring until it thickens.
  4. Add the thyme, season, and simmer for around 12 minutes until the chicken is cooked through with no pink in the middle and the carrots are tender.
  5. Meanwhile, boil the potatoes for around 18 minutes until tender, then drain and mash with the butter and milk until smooth. Season.
  6. Spoon the chicken filling into a large baking dish, scrunch the filo sheets on top, and bake at 200C for around 15 minutes until golden.
  7. Serve the pie with the mash alongside.
